Chop all the veggies and put in a roasting pan, cover with oil and spices. Roast at 400 degrees F for about 15-20 minutes. Once roasted, blend all the veggies in a blender until smooth. Then, put sauce in a pot or a skillet on the stove and add the beans. Let simmer for a few minutes. Then, either transfer to an oven-safe dish(I do not have an oven safe skillet) or leave in skillet and top with 6 slices of Halloumi cheese. Broil on low until the cheese is golden brown.
Toast up some bread with butter and enjoy!
