  1. Skipped breakfast today, so this is a heartier entry – honestly it was more than I could eat. All made with no added oil:

    1 portion falafel (Trader Joe’s mix, just added water and baked two patties on parchment lined sheet pan)

    1 cup quinoa tabbouleh (homemade; cooked quinoa dressed with chopped cucumber, lemon juice, cilantro, parsley, mint, and salt)

    Salad greens with tomato, cucumber, and a quick dressing of plain hummus thinned with plant milk, lemon juice, and some crushed mint leaves

    If anyone wants the full quinoa tabbouleh recipe with exact measurements I can provide it on request! It makes a gigantic batch great for weekly meal prep.
