Easy cauliflower, chickpea with curry aioli

    I was looking for easy, cheap recipes. Inspired by this recipe: https://www.hellofresh.com/recipes/sheet-pan-curry-cauliflower-wraps-61264ec3f4a88439bd093d1f

    Let me know if you have ideas for alterations!

    – 1 head of cauliflower, chopped
    – 1 can of chickpeas, rinsed
    – Spinach
    – Garlic mayo (or mayo + crushed garlic/powder)
    – Curry powder
    – Honey
    – Rice

    1. Start the rice in rice cooker or pot

    2. Toss the cauliflower and chickpeas with salt, pepper, onion powder, garam masala, cumin, paprika (whatever you desire)

    3. Roast in air fryer or oven for ~20 min at 414 F

    4. Meanwhile sauté spinach on stove with salt and pepper

    5. Mix 3 tbs garlic mayo with 2 tsp curry powder and 1 tsp honey, adjust ratios to taste and serving size. Mix in small amount water for drizzling consistency

    6. serve roasted veggies and spinach over rice, drizzle curry aioli on top !

  4. I made this tonight. Followed the recipe except I roasted the cauliflower and chickpeas in the oven (425 for 20 minutes), and used brown rice. Super delicious. This will be in my rotation. Thank you for the recipe!
