Vermeer – Amsterdam.

    Vermeer is a restaurant in Amsterdam that (in my biased opinion) is extremely underrated. They lost their Michelin star this year, while retaining their 18/20 Gault & Millau score; the biggest discrepancy I’ve seen between these two. They’ll probably get it back this year, but it was pretty surprising.

    I’ve been to Vermeer about 6 times over the time of 3 years, pictures are from their menu in December. (Plus two added favourites from different menus.)

    The restaurant itself is quite stylish, 20ish tables and a chef’s table in the kitchen. Service is genuinely world class; skilled and extremely friendly. I’ve brought some ‘non-fine dining’ friends here and they feel at ease immediately. The chef, Chris Naylor, checks in occasionally and helps out with service.

    The cuisine is vegetable-focused, and much of the used produce is grown by the restaurant itself. It’s hard to describe just how much flavour they get out of their vegetables! The focus is 100% on the flavour of dishes instead of ‘show’, but there is still an element of innovation with cool flavour combinations. The level of cooking is genuinely really really high here.

    The wine list is shockingly good and fairly priced. (There are several rare bottles under current market prices!!) The focus lies on France, and most of the top producers are represented. The sommelier is lovely, and she’s very knowledgeable. Wines by the glass are exclusively poured from magnums.

    Menu prices range from € 85 ( 4-course) to €110 (6-course). Most 1-stars in Amsterdam are above this price point nowadays. I highly recommend you to try Vermeer, it’s my favourite restaurant in Amsterdam.
