Any veggies you like (I used 2 bags of frozen peas)
Seasonings- garlic powder, onion powder, salt, pepper, any other seasonings you like
Make a roux, slowly pour in oat milk and season as you like, add Goat cheese and let that melt up and thicken up. Then add whatever other cheese you want at that point (parmesan, mozzarella, etc). When cheese is almost incorporated I added in 2 bags of frozen peas. Stirred in cooked pasta and let it meld for a few minutes.
Maybe took 20 minutes to get this all cooked, super easy and tasty!

I use goat cheese in Alfredo all the time but never thought to use a plant milk. Nice!

What’s the reason for oat milk over regular milk? Is it a different flavor? Or just to reduce cow dairy?

Strange question but are you Lactose intolerant? My wife is but she can eat Goat and Sheep cheese\products but is intolerant. It has to do with how you digest the lactose of different animals. Goat milk is apparently a universal substitute for mammals…including Dolphins! Her doctor 20 yrs ago told her to try goat\sheep products and it changed her world 🙂
Parmesan usually isn’t vegetarian. It contains animal rennet.

I’ll admit I’ve never had oat milk. But almond milk tastes nutty so I figured oat milk would taste vaguely oaty. Am I completely wrong, or is the taste minimal, or did the goat cheese just overpower the oaty bits? I’m very intrigued!

Surely a béchamel derivative and not alfredo? Alfredo is an emulsion.

If you have never tried it, check out The Drunken Goat cheese ([apparently Target sells it](https://www.target.com/p/the-drunken-goat-semi-soft-goat-cheese-bathed-in-red-wine-6oz/-/A-14929058)). It’s what I use for when I make an Alfredo sauce lactose “sensitive” 🙂
