I have a toddler who isn’t terribly picky. I’m looking for more ideas for our rotation.

My contributions:
– She loves mashed potatoes. I purée a can of cannellini beans in the blender with some plant milk and add that to the potatoes.
– [chocolate avocado mousse](https://chocolatecoveredkatie.com/avocado-chocolate-mousse-vegan-healthy/)

My daughter isn’t a toddler anymore, but I swear teenagers pallets revert back to being toddlers for a few years. She is thrilled to see fresh mozzarella, cucumbers, and plenty of fresh fruits. I also order TVP off of Amazon and use it to make fake meat shepherds pie or vegetarian chili. For veggies, she weirdly loves roasted Brussel sprouts as long as they start from fresh, raw carrots, asparagus sautéed in garlic and olive oil. I make a lot of stirfry’s so people can add whatever sauce they want to after I have sautéed all the veggies and tofu as well

  2. My kiddo loves tofu ‘fries’ roasted in the oven, steamed or roasted broccoli, and yogurt. Absolute fave is frozen blueberries which we always have on hand. I’ve tossed a handful on top of many dinner plates to get them started.

My kids love lentils. Any way we make them, they enjoy. Lentil tacos are probably the most favorite.

  4. No kids of my own but my niece (not actually vegetarian) loved loved loved daal over rice. It was a simple thin yellow daal made with coconut milk. She still loves it, they made a not very spicy version

Plain straight from the can chickpeas, cherry tomatoes, sliced avocado, nori snacks, and any and every fruit

  5. A large plate of fresh fruit, cucumbers, cheese, and bell pepper. I set that out during TV time around 4pm and it gets devoured every time.

    And of course, spaghetti!

  6. Ever pondered a shepherds pie? It’s a great way to sneak vegetables into..well, a mountainous mashed potato bake.

  7. My mom would blend leafy greens into berry and banana smoothies for us all the time. They tasted great.

I’m also fond of roasted red peppers being blended into marinara for an extra kick of nutrients and flavor. Kids can’t tell the difference.
