Ingredients:
– Two big leeks (600g approx)
– Butter
– Black pepper
– Two jars of white beans (they have 400g each)
– Vegetable broth
– Smoked paprika
– Extra virgin olive oil
Steps:
– Cook the leeks on medium heat with one teaspoon butter and another of olive oil and black pepper to taste, until golden.
– Add the beans and cook it for a bit more time.
– Add veg stock until it covers the veggies (add salt if necessary but the stock will have it)
– Simmer for about 10 mins.
– Blend.
– Mix smoked paprika with some olive oil and use it when plating. Add your preferred crunchy toppings.
And that’s it! You can use any oil I guess, I used olive because it’s the most common in my country.

Can you zhoozh it up with some saffron or turmeric? I feel like adding some yellow would increase the visual contrast and with saffron at least could add a lovely botanical note.

This looks so good every time I scroll past. Mixing the paprika and oil for color that way is a trick I’ll have to remember.
