A deboned 15 lb suckling pig lined first with a layer of a maple sage cardamom sausage with a roll of bacon wrapped chorizo in the center. This was my first go at a serious ballotine. Sadly, I do not have a platter big enough for something like this, so please forgive leaving it on a baking sheet for the first picture!
