Delicious and filling dinner, perfect on a cold day.
* 1 serving Japanese curry rue (I used Vermont apple and honey curry rue)

2 sweet potatoes cubed
* 1/2 sweet onion diced
* 3 celery stalks chopped
* 4 large carrots chopped
* 1/4 lb fresh green beans
* 1/4 tsp white pepper
* 3-4 cups vegetable stock- enough to cover veggies in pot (I used Better than Bouillon roasted vegetable, and it was delicious)
* Olive oil
In a large pot heat oil over medium heat. Sautee vegetables for 5 minutes until onion is translucent. Add vegetable stock and rue and bring pot to a boil. Stir frequently. Once curry rue is dissolved and the pot is bubbling put heat on low and simmer with the lid on for 20 minutes.
Serve over rice
