211 cals & 18 g protein. I make this soup almost every day because it’s delicious and filling. Very easy, too.

    * 1/4 cup shelled edamame
    * 1/10 bag Birds Eye power blend Southwest style
    * 3 cherry tomatoes
    * 100 g mushrooms
    * 1 tsp “no chicken” Better than Bouillon
    * 2 T nutritional yeast (added after pic) Nutritional yeast is optional, but it supplies a ton of nutrients and 1/2 the protein, so…
    * dash sweetener
    * dash lemon (optional, but I think it’s really nice)
    * I use Sari brand non-fortified nutritional yeast because it has the best macros (2 T= 60 cal and 8 g protein). The nooch container in the pic is an old Bragg brand one I re-fill with Sari.
