My mouth should feel overwhelmed with joy if I did this right, right? This is my second go. I think I messed up on a few levels:

-my target weight was off because I didn’t calculate the bone in it. I actually don’t know ofuou are supposed to change anything if it has a bone.
– I experimented with five spice powder which I dont think was a good choice.
-when I cut in, there is a wet spot(third image shows it) is that case hardening?

Even if it’s safe to eat, I’m not constantly fighting the urge to consume all of it like my first experiment, I should just toss it, right?

Anything y’all spot that I should watch out for?

    Looking at the pics, case hardening. The center hasnt been able to dry enough by the looks.
    Can you approximate the weight loss? Vac Pack and toss in the fridge for a few months, let it equalize
