The cauliflower is actually from a cookbook I own, called „Orient trifft vegan“ (trifft = engl. meets).
Cut 1 cauliflower into florets, maybe smaller. Mix juice of 1 lemon with about 2tbsp of olive oil, 2 cloves of garlic, grated or finely minced, salt, pepper, Chili powder. Marinate the cauliflower with that while heating your oven to 180C (350F) and bake for 25-30 minutes.
In the meantime make a salad out of Persian cucumbers, (cherry)tomatoes and red onion. Dressing is: freshly lemon juice, salt, pepper, olive oil and a generous amount of sumac. (I don’t give amounts here, I think you all know how to make a salad to your liking and have your favourite amounts).
In a cup of (soy) yoghurt grate 1 big clove of garlic and a small pickle (we have some called Cornichons here, they’re about the size of my pinky most of the time, if that’s not a thing in your country, just take a pickle and grate an adequate sized piece of it). Season with lemon juice, salt and fried mint.
Assemble wrap with baked cauliflower, yoghurt and salad, if desired, add a piece of (vegan) feta cheese end enjoy 😊
Tastes good hot and cold.
