    I do one alteration of the original recipe, and add a splash of red wine to deglaze the pan after cooking the veggies.

    Optional: you can mix lemon juice, salt, and pepper into the ricotta before putting it in the pan.

  2. The healthier option is just make it with a veggie mix and no noodles! Also add lots of spiciness if into that.

  3. It’s a very simple recipe and it’s actually great, but like another user mentioned, you can substitute noodles for veggies. Pros it’s more nutritious, cons it tastes worse. Your call.
