Recipe:
Peel 2 carrots and cut in thin slices diagonally, cut red ball pepper in stripes, 2 spring onions in small pieces, separating greens and whites, cut of bottom part of 1/2 pack of shimeji mushrooms (or prepare about 1/2 cup of mushrooms of your choice), mince 2 cloves of garlic and a piece of ginger. unpack 1/2 cup of frozen edamame and Meat substitute and make sure you have everything in your range of reach.
Prepare chow mein noods according to instructions, drain and set aside. If desired, put some fresh bean sprouts in a metal strainer and hang it in the pot while boiling the noodles, take out after 1-2 minutes and put in cold water after to prevent them cooking further and get mushy. Whisk 2 eggs with a splash of soy sauce and sesame oil each, make scrambled eggs until “almost done”, take out and set aside.
Fry meat substitute for about 3 minutes, add more veggies every 2-3 minutes while stir frying: mushrooms, carrots, bell pepper, spring onion whites, ginger and garlic, (bean sprouts).
Remove pan/wok from heat. Add noodles, spring onion greens and egg, add a mixture of soy sauce, sesame oil, sugar, black vinegar and chilli flakes, stir thoroughly and serve.

It looks great and the recipe is quite simple, I just don’t know how to feel about ginger… I like ginger tea and everything but in a meal. Regardless, I have to try it.
