Hi, after a recent dinner party we have been left with a leg of what I think is Spanish Paleta ham (from front leg, as opposed to Jamon from the rear legs).
While this is (hopefully) a lovely surprise. It took me 4 days to find it hidden in a plastic bag in our larder where a guest had put it.
I have unwrapped it from its bag and paper prison and hung it up, but it has some mold on it (see attached images). I believe white dusty mold is probably good, but there is also some greenish mold, and possibly black (might just be the dark meat?).
Any advice on what I should do? I tried a small sliver of the ham which tastes good, although the thick fat layer on one side seems a bit bitter. So far still alive..
