I had some of this mushroom in the freezer but couldn’t find anything online for making butter “chicken” with it, so figured I’d share here! My meat eating bf wasn’t convinced it wasn’t real chicken in the end, so it was a success.
But prepped the mushrooms by sautéing them in a little oil for about 3-4 mins then adding 3/4 cup of veggie broth then putting the lid on the pan to steam them, for maybe 5 mins more. Let them cool on paper towels for a little, then did the yoghurt sauce on them and put it in the fridge for an hour or so before making the curry and putting it all together

Unsure if this comment is acceptable for this sub, but the Naan could be better. I’m not sure of the recipe you’ve followed for it, but I would suggest using a bit of curd while making the dough and making sure the dough is soft and cushy. If you are dairy free, I would suggest using quite a bit of vegetable oil.

It looks awesome and relatively simple. Like other people have said, finding good mushrooms can be a bit tricky but I think this recipe is worth it. Definitely saving this, and thanks for sharing.

Vegetarian butter chicken is soooooo gooood! I’ll be honest since I’ve made it weve been eating it like once a week 😂 I know this is weird but I add a cup a kale to it (doesnt change the flavor and gives it some color) as a way to boost vit d in the winter.
