    * 1/2 cucumber
    * 1.5 radish
    * 1/3 block extra firm tofu
    * 1/4 c edamame
    * dressing, see below
    * Fiber Gourmet noodles, 44g dry weight
    * radish toppings: sesame seeds, cilantro, green onion

    Dressing is 1/2 serving of [this recipe](https://www.budgetbytes.com/thai-peanut-sauce/), thinned with water.

    Pan fry tofu and boil noodles. Combine with veggies and dressing.
