* 2 T butter
* 2 x 14oz Impossible Sausage tubes. (Savory and Spicy both work well!)
> Cook sausage in soup pot, remove sausage when done, set aside to cool.
* 2 – 2.5 cups carrots, sliced ~1/4 inch thick
* 2 – 2.5 cups sweet yellow onions, diced
* 2 T garlic pressed or minced
> Saute veggies until softened and caramelized. ~10-15 minutes
* 1/2 cup flour
> Mix flour in and let simmer while stirring for 1 minute.
* 10 cups vegetable broth (We use *Better Than Boullion: No Chicken Base*)
* 12 oz tomato paste
* 2 t dried basil
* 2 t dried oregano
* 1 t dried thyme
* 1/2 t dried rosemary
* 1 T ground pepper
> Add in the above, mixing to incorporate the tomato paste. Bring to simmer. Allow to simmer for ~10 minutes.

> Boil and strain cheese tortellini, keep separate from soup.

> Crumble or dice cooked sausage.
* 4 cups spinach, chopped
* 1/2 cup ground parmesan
* 2 cups heavy cream
* 2 x 15 oz cans of great nothern beans (or other bean of choice)
> Add above and diced sausage. Allow to simmer a few minutes before adding tortellini to individual bowls and adding soup to bowls.
