So I’ve been making Alton browns jerky recipe for probably a decade now. It’s a cold air method that uses a box fan and air filters. Some of you might be familiar with it. Basically you stack your marinated meat on air filters, then stack those filters on a box fan. Then allow the box fan to blow cold air across the meat for 24-48 hours. It’s a great method that makes truly dried jerky, rather than cooked jerky.

So my plan now is to build a rack inside an extra fridge I have. That rack will hold trays that have stainless mesh screens on them. The screens with hold the marinated meat. There will be a box fan in the bottom of the fridge to move the cold air around.
My question is about moist air removal? Could it be as simple as leaving the fridge door cracked? Or desiccant placed in the fridge? Or use an actual dehumidifier? This process is fairly short.
This charcuterie sub is a lot more knowledgeable about actual drying of meats. The folks on the jerky sub think you’re some kind of weirdo witch if you’re not using a dehydrator.
