Baked Chickpea fries: Chickpea Fries Ingredients 2 cups water 1 cup garbanzo (chickpea) flour salt & pepper , your choice of seasonings ie. Cumin. Directions: Lightly oil an 8×8 square dish. Add the water and 1 tsp salt to a medium saucepan over medium heat. Pour the flour into the pan and whisk thoroughly. Grab a spoon and stir constantly for 5 minutes, the mixture will be very thick. Scrape the mixture into your oiled baking dish. Spread the mixture evenly in the dish and set aside to cool, about 10 minutes. Cover the dish and refrigerate for at least 2 hours. Flip the dish over onto a cutting board to release the molded mixture and cut it into sticks about 1/2-inch thick and 4 inches long. Bake the fries: Preheat oven to 400F/200°C. Take the baking pan out of the fridge and cut the prepared chickpea flour mixture into fries. Align the fries directly on the baking rack and bake for 20 minutes. Placing them directly on the baking rack will make them extra crispy. Flip each fry and bake for another 10-15 minutes. They should be crispy at this point.

Thanks for sharing, these look tasty and fun! It also reminded me of these polenta fries that a restaurant I used to love (lost to Covid) had on their menu. Polenta fries and the eggplant “Jenga” were the two appetizers we would alternate between when we went there.
