Polenta with garlicky greens and pan-fried soy curls (419 calories, WFPB/oil-free)

  1. 23g protein, 64g carbs w/14g fiber, 6g fat.

    Combine 1/2 cup veggie broth, 1 cup water (could do all veggie broth, I just didn’t have that much), and a dash of salt in a pot, bring to a boil. Add 60g polenta, reduce to a simmer, and whisk for 5 min. Cover and cook for 30min, whisking every 3-5min or so. Add 1 tbsp of nutritional yeast and salt to taste.

    Soak 20g soy curls until soft, squeeze out water. Combine 1/2 tsp tahini, 1/2 tbsp liquid aminos, 1/2 tbsp nutritional yeast, and garlic and onion powder to taste in a bowl and marinate soy curls. I try to squish the marinade in with my hands. Cook on a nonstick pan over medium heat for 5 minutes each side, then set aside.

    Add 150g of greens to the pan with garlic powder and salt to taste, cook with a little water until wilted and tender.
