This was a super simple dinner for a weeknight. I just shredded a small cabbage and steamed it until tender (maybe 5-6 minutes).
Meanwhile I peeled and chopped 2 small Idaho potatoes and 1 medium zucchini. (peeling optional, in fact I left some stripes on the zucchini for better texture)
When the cabbage was done I placed it in a container then put the potatoes in the steamer. About 3-4 minutes later I added the zucchini- it cooks faster than the potatoes in about 5 more minutes.
When the potatoes and zucchini were very fork tender I placed them in a container and mashed them well. then I added a generous teaspoon of fresh thyme and a little salt. Normally lots of vegan butter would be great here but you don’t need it thanks to the zucchini. Instead I added just 1/2 tsp earth balance each on top of the mash & cabbage when I plated it.
Finally I removed the steamer basket and dumped out the water, then used the same pot to sauté the seitan with just a bit of canola oil spray. (Of course you could do this in a separate pan I was just trying to have fewer dishes to wash) When the cubes were nicely browned I poured on 2 tbsp of A.1. and gave them a stir.
It was all so light yet hearty. It made 2 meals & I can’t wait for tomorrow’s leftovers.
Would this work with a bamboo steamer? That’s all I have. Also, what could I replace the A1 sauce with? I don’t really like mashed zucchini and to save calories and carbs I was thinking of using mashed cauliflower as an alternative to potatoes… just a thought. This recipe sounds really good- I’m a huge fan of cabbage and I’m happy to see a recipe utilizing it so I think I’ll give it a shot!
