  1. On the plate:

    * 1/2 cucumber
    * 1/4 orange bell pepper & 1/4 red bell pepper
    * 1/3 block extra firm tofu
    * 1 serving of Fiber Gourmet noodles

    Dressing:

    * 2 tsp vinegar
    * 2 tsp soy sauce or tamari
    * 1/2 T white miso paste
    * 1 tsp toasted sesame oil
    * minced fresh ginger, about 1/2 tsp or more
    * 1 to 2 T sweetener (adjust to your taste, I used splenda)
    * water to thin

    Pan fry tofu (squeeze water out first), boil noodles, cut up veggies, and make dressing and then combine everything.
