I make long plastic bags to seal my cured salami in from vacuum sealer rolls; usually three socks width of roll. I seal the edges with the vacuum sealer to make a long plastic sock but I don’t vacuum it in the end.
The idea is to stop moisture loss once it is already at the target weight. If you actually vacuum it I’ve heard that it makes the mould go all funny.
Anyway, do you know of anything I could buy to save making these socks? Perhaps a long plastic tube like they use to package salami commercially.

You should be able to buy this as a premade product. My local store (australia) has this type of thing has them in perfect salami size. They are not in a roll, they are just in flat sheets.
