Plenty of people got mad at me last week for posting my Sunday roast instead of fine dining. I’ll make up for it now… don’t know how to annotate photos so big post here instead.

Definitely one of the best meals I’ve ever had, and it’s my warmup for Noma tomorrow!

1) G&T and a few glasses of wine to start (including a cheeky glass of Keller)
2) sundried pickled tomato, gooseberry canned in honey, pickled strawberry with langoustine
3) raw shellfish: queen scallop with blackcurrant (pickled obviously, there’s a theme here), cockles with sliced green hazelnut, mahogany clam with pear, cured squid with magnolia
4) Oysters and Brassicas: Artichoke, and apple purée, smoked oyster, wrapped in cabbage leaf, amazing broth
5) Cherry leaf “taco” with Havgus (Danish cheese) and aged ham
6) Raw Norwegian shrimps with honey-canned figs, quince, and fig leaf oil,
7) Salmon (smoked in house on cherrywood, you smell it as you walk in) with pickled onion, pine and lavender beurre blanc,
8) the smoked salmon rind with pickled white asparagus and cucumber
9) horse mussel, pumpkin, pumpkin seed sour cream, pickled pine cone, served with a rye waffle.
10) king crab with ossetra caviar, served with a very nice lees-aged Blanc de noir
11) Dehydrated and smoked carrot + beet with some squid and shrimp foam
12) Rye tart with maitaki mushroom, pig cheek, danish cheese and apple
13) Total show off dish of charcoal roasted pork belly, both fat cap and inside perfectly cooked, with quince, black walnut and wild garlic. Unreasonably good!
14) some garden fruits: frozen, pickled and canned fruits served with fruit leathers and Dr Hermann Erdener Treppchen Auslese
15) Berry Kelp? With more pickled stuff. I don’t know even know anymore tbh
16) walnut tart, tasted like pecan pie but with walnuts. Awesome!
