When I was weighing my curing salt into my eq cure dry rub I was supposed to weigh in 5g but it went to about 5.35-.40g for a 2030g pork shoulder. I was using digital scales to weigh it so it is an accurate weight. I think it’s only the tiniest bit over on it but all the talk about too much is toxic has made me paranoid probably by overthinking it all. But there isn’t really a guide to any tolerances on using curing salts however fine or non existent they may be. I’d like to hear what others think as the last thing I want to do is make something toxic. Also how long should I be really leaving this to cure for, is it crucial to not leave it too long. I also want to make sure it’s had time to penetrate at full depth 😆
