237 calorie bean and corn pasta salad with sweet lime & pepper vinaigrette

  1. Ingredients for 4 servings:

    * 1 can beans, drained
    * 3 servings of cooked Fiber Gourmet light pasta
    * 179 g chopped zucchini
    * 224 g chopped bell pepper
    * 1/2 cup frozen corn
    * 1/2 small onion
    * cilantro to taste

    Dressing:

    * 1 cup apple cider vinegar,
    * 1 T neutral oil
    * to taste: sweetener (I started with 5 packs then added more), lime juice, black pepper, salt or no-chicken concentrated broth. Note, the more acidic you make the dressing (with lime juice) the more you will want to add salt and sweetener to balance.

  2. I LOVE THAT PASTA, I cook it a lil longer so it feels like normal rotini 😏😏😏
