i visited de kas in march 2024 and got the 4 course lunch menu.
appetizers:
– beet gazpacho
– tapioca chips with celery mayo
– sourdough with whipped porcini butter
– raw radishes in a creamy ginger sauce and a seedy breadcrumb mix
– cabbage and pickled ginger spring rolls
lunch courses:
– beets, basil, and burrata
– scallops, bass, butter beans, and saffron mayo
– roasted cauliflower and some sort of nut foam
– bay leaf and lemon sorbet with candied lemon and an almond madeleine
desserts:
– caneles with vanilla creme pat
– chocolate-rhubarb sorbet
i genuinely appreciated the absence of a meat course. it meant that i walked away from the lunch feeling completely satisfied, without feeling weighed down.
the service was quite average; there were a few moments where we couldn’t get our waiter’s attention and the pacing of each course was a tad slow. but i think their overall concept is strong – guests can tour the greenhouse and see the produce that is used in the dishes. and i was pleasantly surprised with all the extra dishes outside of the set courses.
i would love to try their dinner menu someday (with the hope that the celery mayo is a part of it – it was delicious and one of my favorite parts of the meal.)
