Amouse Bouche

(1) Banana cashew w/ kelp shavings. I felt the banana was too overpowering and can’t taste much of the kelp.

(2) Chicken liver with parmesan crackers and sherry. Good opener nothing to comment on.

(3) Fjord trout with caviar. Amazing dish with nice balance of acidity and saltiness.

Pre starter

(4) Egg custard with onion and scallop. Scallop is cooked perfectly and has nice texture. Onion pairs well with the custard.

Starters

(5) Smoked Kingfish, blood orange. Nice balanced dish with a tad hint of smokiness. Blood orange pairs nicely with the fish as well.

(6) Hash, leek and Bafun Uni. A hit for me as I think everything pairs well together.

(6) Octopus with fermented (?) peppers and garlic. Octopus is cooked nicely, but I think the sauce needs a bit more punch and salt.

(7) Bread and sakura smoked butter. This is a bit disappointing as butter definitely needs more salt / character and the bread can be a bit moist-er.

Mains

As there are 2 of us, we selected one each.

(8) Iberico Pork Presa, broccolini, cauliflower, blueberry sauce. Pork cooked well and pairs bery well with the blueberry sauce. Broccolini cooked perfectly. However, the cauliflower (though good on its own) does not seem to pair well with the sauce or pork.

(9) Short ribs, maitake, sauce diane, carrot. This one is amazing. Everything is cooked perfectly and pairs well together.

Both mains are amazing, but I do prefer the beef.

Pre-dessert (?)

The pre-dessert is donabe-like. You can refill if you want.

(10) Duck with barley and onion + shaved truffle. This is interesting, though not something that I will order separately.

Dessert

(11) Earl grey tart (?)

(12) Strawberry jam, yogurt, meringue.

Not a good judge of dessert since I am not a dessert person. lol.

For the price, i felt it’s definitely worth. Taste wise, I feel this is better than some 1* I had in Singapore. Will probably be back.
