Wholegrain Penne pasta with sauteed arugula greens, red peppers, black olives, garlic and tomatoes.

    Ingredients:

    Whole Wheat Penne Pasta – 1 cup, chopped arugula greens – 2 cups, chopped red bell pepper – 1 cup, sliced black olives – 1/4 cup, fresh garlic – 4 to 5 cloves, chopped tomatoes – half cup, cooking oil – 2 tablespoons, salt and pepper to taste, vegan Parmesan cheese to garnish.

    Cooking instructions:

    Step 1 – In a skillet, heat cooking oil on medium heat and saute red bell peppers for a couple of minutes. Add finely minced garlic and saute for another minute or so. Add chopped tomatoes and olives and let cook until tomatoes are softened. In the end add chopped arugula and let cook for a minute or so. Add salt and pepper to taste and turn off the heat.

    Step 2 – Add penne pasta to boiling salted water and let cook until al dente. Drain water and add the pasta to the above sauteed veggies. Give it a good stir. Add some pasta water if necessary. Garnish with Parmesan cheese and enjoy!
