Greens ‘Risotto’ – 298 calories per serving and delicious! Ingredients in second pic and recipe in comments

  1. Recipe adapted from the Nosh Vegan cookbook, recipe and ingredients are for 4 portions:

    1) Fry some garlic and half an onion for couple mins with a table spoon oil,

    2)Add the plum tomatoes and fry until wilted,
    Add the rice, nooch, and sundried tomatoes and fry for a min, season with salt and pepper,

    3)Add 600ml water/stock and simmer with lid on for 5 mins,
    Add the kale and green beans on top (do not stir), put lid back on, and simmer for 7 mins,

    4)Turn off heat and add dried basil/fresh basil on top.

    Enjoy 🙂

    In the cookbook, they add 2 tablespoons of oil and some cashews. I’ve removed this and only used 1 tablespoon of oil to lower the calories.
