Flour + Water is an Italian restaurant on the Michelin Guide in San Francisco. I had previously had an a la carte dinner here and enjoyed it, but wanted to try their $135/person pasta tasting menu. They make fresh pasta in-house.

This was the perfect overall food amount for me. (Each serving here is for 2 people to share, so they adjust plating according to party size, I think. We had 4 people total) I was full but not overwhelmed. The quality slightly exceeded my expectations! The standouts were: the buttermilk panna cotta, arancini + truffle sformato (served together), aleppo corzetti, vrache di mulo, and chocolate budino. I loved the depth of the herb oils and beans melding together with the panna cotta. The arancini went together well with the sformato. The foam texture was good and it had 3 layers, including a crunchy potato layer that was made sweet by the balsamic honey. I liked that the aleppo corzetti was slightly spicy. The coffee braised veal was tender.

Overall, this place is good at a variety of textures and flavor combos. The dark chocolate budino is a must have dessert, even if you go a la carte. The silkiness and thickness of the chocolate mousse is amazing. Other people I dined with also enjoyed this dinner. I recommend Flour+Water for people who want a slightly upscale but chill experience with good pasta.

Maybe I’m being really picky here, and I’m sure most of those dishes were delicious, but the plating is super unappetizing imo. Many of the dishes just look like liquid poured onto a plate with no care.

Story time: wife and I had eaten at F+W a handful of times, always excellent, always a la carte. We drop in late one night for a quick snack (bowl of pasta, glass of wine) and we see they’re doing the pasta tasting menu. It’s too much food for us at that hour, but we’re gluttons and interested, so we ask if we can share a single tasting. Server says no, whole table has to order it. I explain we’re not that hungry, and ask if it’s a problem for the kitchen, or some other reason (we didn’t want to be a hassle to the back of house, but it didn’t really add up). Server gets really mad at us for asking (I promise I was not being obnoxious). I ask her if I had come in alone would she have served it to me, and she says yes. (??) Manager overhears what’s going on and interjects that it’s not a problem at all. Ok, problem solved, but now the mood is a bit weird. So we ended up not really enjoying the experience, but the worst part of everything was that the food was entirely forgettable. None of the courses popped. I think we were the victims of an inexperienced server and an off night. I’d actually give it another shot some time…
