Super late to the Lima party but glad to have experienced Central. We did it before Mil and I’m glad we did as some elements were similar between the two.

It’s a very cerebral tasting menu. Similar to Noma in that the experience is incredible but I’m not dying to go back and nor was there any specific dish that made me wish for a second serving immediately (I’m looking at you Oysters and Pearls @ Per Se/TFL or the uni toast @ CTBF).

Interesting concept of composing dishes by ecological altitude but that necessary places a limit on ingredient choice. The vast majority of courses this worked however not always.
