BBQ tempeh and cheesy grits with collard greens for 470 calories. A big-ish breakfast, but still reasonable for my limit

  1. Disclaimer: this recipe is for two people plus leftovers. I weighed everything out and portioned it for the 470 calories on my plate today.

    Grits:

    1 cup cornmeal

    1 tbsp olive oil

    1/4 onion

    5 g nutritional yeast

    1 slice daiya cheddar chopped up

    4 cups water

    2 tsp “no chicken” bouillon paste

    Salt

    Tempeh:

    8 oz tempeh

    1/2 cup bbq sauce

    Roasted at 450 until crispy

    Collard greens:

    150 g chopped greens

    2 cloves garlic

    2 tsp olive oil

    Splash balsamic vinegar

    3 tbsp water

    0.5 tsp no chicken broth

    Salt

  3. This looks delicious. I’ve only made tempeh once and it didn’t come out very well. Did you steam it before roasting, or just roast?
