Should I wipe this with some vinegar or let it keep going?

    Using T-SPX. Fermented for three days at 68F, 90% humidity and has now been at 56F, 85% humidity for about a day

  3. There is nothing wrong with that mold. I just let it go and wash/wipe it off with wine or vinegar when I take it down.

  4. Those bluish tones are a bit risky. There are strains that are perfectly safe on that color, but unless you inoculated it yourself or know what molds you regularly have in your dry aging environment, why risk it? I’d recollect getting a hold of mold 600 or similar in the future for inoculating the exterior.

    Let it go. It’s adding flavor and inoculating your chamber. It’s also keeping bad mold at bay. I look for complete coverage on mine.
