whenever I have leftover aquafaba, I try to make vegan mayo with it like this recipe: https://minimalistbaker.com/easy-vegan-mayo-with-aquafaba/

but every time, I’m left not with mayo but with a very thin aquafaba-oil liquid mixture. the recipes say to just add more oil/mustard and blend again if it doesn’t emulsify, but it doesn’t work for me, just wastes more ingredients. in every youtube video I watch, the mayo emulsifies in seconds, but mine just doesn’t.

is there a trick to it that I’m missing? could it be that I’m using an immersion blender that isn’t powerful enough (this is the one I’m using)? I’m tired of wasting ingredients.
