anybody familiar with the mediterranean chain, taim? they have a golden eggplant that is melt in your mouth incredible. tips or tricks to get the same results at home?? extra points for air fryer instructions. tia!

    Looks like it would just be cubes of eggplant tossed with a generous amount of olive oil, salt and pepper, maybe some spices like cumin/coriander/garlic/onion/zaatar. Air fry around 400, shaking often, til golden on the outside and creamy on the inside. Air fryer is pretty good for this, just make sure to shake it often. This is how I make eggplant for Mediterranean rice bowls at home and it’s great.

  2. I gow eggplant at home and I will tell you that the varieties make a huge difference. The typical globe ones you find at the supermarket will turn to mush. I would head to and asian market and try using a Chinese or a Japanese variety. They are the long skinny ones.
