Finally made it to Kadeau, Copenhagen. First couple of courses started off slow and not super interesting, but then the level of creativity and flavour profiles went up a few notches. Powerful combinations like squid and potato, peas and oyster, and cauliflower and crab. Believe it or not, they work so well. Impeccable execution and homage to the island of Bornholm, with a focus on super ingredients, locally grown produce and foraged to the extent possible. Non alcoholic pairing is really the way to go – as good a drink pairing as you’ll find in this city.
