Thought I’d change it up a bit and tossed on some Filipino sausage (Longanisa) on a NY style pie I made in my home oven. I also envisioned and made a salted yolk sauce, which turned out to be too rich as an accompaniment.
58% hydration / 550 on steel / 24hr ferment
