  1. Quick and easy meal prep!
    Made 6 servings – 2 for tonight (not pictured as already eaten!) and 4 for the freezer.

    Made with a block (450g) of “Tofoo naked XL” which I oven baked for 25 mins with just a few spritz’ 1 cal oil + salt, pepper and chilli flakes, that made 4 servings so 2 of these curries dont have tofu in, but when we come to have them I’ll either make fresh tofu or perhaps add chickpeas!

    Very tasty- If I’d had extra calories maybe I would’ve added a 2nd tin of coconut milk to the pot, however I’ve heard it doesnt freeze well if it’s the main component of a sauce so I wanted to keep it minimal.
