Scones with clotted cream & jam.
* I use [this](https://www.bbcgoodfood.com/recipes/classic-scones-jam-clotted-cream) BBC food recipe for the scones themselves.
* For the jam, not traditional but I make a quickie summer fruit version which is both sweet & tangy. I combine 230g frozen summer fruit, with a tablespoon of Demerara sugar & half a juiced lemon. Heat it on the hob until it softens, mashing it up along the way.
* If too watery, combine a teaspoon of cornstarch with a tablespoon to make a slurry then add it to the jam mixture whilst cooking until it thickens up. Serve with some clotted cream!
