    I’m new to the sub, and I don’t know if it’s necessary, but I made this in my instant pot.

    I sautéed some diced onions, carrots, celery, and garlic in olive oil, then added 2 boneless, skinless chicken breasts, some better than bouillon, salt, pepper, thyme & oregano to the pot and sealed it up.

    Cooked at high pressure for 15 minutes. Natural release for 10 minutes, then released the rest of the pressure and turned it to saute mode. I shredded the chicken and added it back in, added about a cup of Israeli couscous, and cooked it for another 10 minutes until the pasta was soft. Then I turned it off and stirred in some baby spinach and served it up!

    A little drizzle of olive oil on top for good measure and there you have what you see. 🙂
