I know this is a little high in calories, but it’s worth it. Delicious and filling!
Scramble: bell pepper & yuba pan fried, with Just Egg and spices
Potatoes: baby potatoes boiled in salted water, then tossed with a little vegan butter
(I estimated half a tablespoon of butter in my portion. According to the potato bag, 4-5 potatoes have 60 calories. I ate a fifth large-ish one, and estimated 67 calories.)

This was surprisingly easy to make! The potatoes just had to boil, and the sausage needed to be flipped periodically. I microwaved the beans in a glass dish. The only part that required any real work was the scramble. I didn’t have any tomatoes or tempeh bacon, but hopefully next time!
