My buddy has always been looking for Cheddar cheese that can really knock your pajamas off with how sharp it is. He's discussed what he remembers as a brand or type called "Rat cheese" actually having that printed on the label. Any searches for that just bring me to it being a common name for plain sharp cheddar. He's from Massachusetts where he would have had it. Or possibly Maine. I would be grateful of someone knew about this specific cheese or has a recommendation for an absolute dastardly sharp cheddar. Thank you

    We do offer shipping. However we have never shipped outside Sweden but nothing is impossible, rigth? He migth also like a really matured Havarti from Denmark.

  2. I grew up eating “rat cheese” in northeastern PA. I think Cabot 5 year cheddar is my favorite sub.

    They have a 28 year cheddar that is so freaking sharp, it’s got diamonds in it 🤤

    They do ship, and while their website says things are unavailable I always tell people to call and ask instead because the website isn’t always current. A lovely family run business!

I highly recommend that your friend check out [Murrays.com](http://Murrays.com) where they have a live chat feature (during business hours Eastern Time) and talk with one of their cheese specialists. They should be able to steer your friend in the right direction, this is a pretty basic question and they have hundreds of cheeses, both domestic and imported, from which to choose.

    Apart from that, Beecher’s makes a really sharp cheddar from sheep milk, it is called Sheep Sheep and I actually use it as I use a Parm or Pecorino Romano or something on that order- but it’s very nice sliced on crackers also.

    I’ll also agree that the black wax Cabot 7 year cheddar is a great one for a basic, extra sharp cheddar.

  5. Tillamook reserve is pretty damn sharp- the ones from 2017 were wildly delicious. That is- I bought them and ate them last year, but they were aged since 2017.

    20 Year Plaid Aged Cheddar from The Mousehouse in Wisconsin fits the description, although a mouse is involved rather than a rat. Their visuals involve a very holey cheese, the kind that some people refer to as mouse cheese.

  7. Theres a cheese maker in upstate ny called River Rat Cheese. 1000 islands region. They make some xxx cheddars.

    Try 18 year cheddar. That stuff does NOT mess around. It’ll slap ya right across the face lol

    I got some 15-year aged cheddar to a factory store in Wisconsin a while back. It was crunchy. And I mean that in a good way. Knock you right out of your camp chair.
