This is one of my favourite ways to prepare a quick side dish for dinner!

Ingredients:

• Button mushrooms halved or sliced into thirds, depending on the size

• Chopped broccoli florets and stems, the leaves are also delicious but the broccoli I had didn’t have any leaves on it

• Whole dried red chillies (if you don’t have any, dried chilly flakes can be added later in the cook)

• 3-4 cloves of garlic sliced, minced, or grated (dealers choice)

• Light soya sauce

• White vinegar

• Crushed black pepper

• Salt (optional)

• Cooking oil (I used soyabean, but any without a strong flavour works)

Recipe:

  1. Heat a cast iron pan over medium-high heat and add a teaspoon of oil.

  2. Turn the heat down and the garlic and whole dried red chillies, stir for 15-20 seconds, be careful not to burn the garlic too much. A mild burnt taste is pretty good though.

  3. Add the broccoli and mushroom to the pan, stir fry for 3-5 minutes. Turn the heat up again during this time.

  4. Add soya sauce to your taste and chilly flakes (if using). Add a splash of vinegar and let it sizzle for 20-30 seconds.

  5. Cover and cook on low heat for another 10 minutes.

  6. Turn off the heat, uncover. Add crushed black pepper and taste for any salt or vinegar adjustment.

Done!

Enjoy with rice, eggs, and a nice cup of tea 🙂

The recipe is extremely customisable too as you can replace the broccoli with any other firm vegetable or just add other vegetables in along with it, and also use options like tofu or paneer instead of mushrooms.
