I sanely flavorful, filling an only about 250 calories for a generous bowl of soup!

It’s a soup season staple of mine.

  • cut up a butternut squash, sweet potato, bell pepper, carrot and onion. Toss it in olive oil, salt and a bit of cumin and paprika.
    -Then I add a whole cube of feta and a head of garlic with the top cut off. Drizzle a bit of honey on the feta. Add fresh rosemary and time, sometimes sage if I have some.
  • Roast it at 350 for an hour and a half.
    -Take off the herbs. And the garlic and toss it all in a pot.
    -Squeeze all the roasted garlic in.
    -Add a box of chicken stock and simmer for about 15 mins.
  • purée and serve!

10/10 every time.
