    Intend to make a blackened chicken Alfredo for the girlfriend later this week but utterly failed the last time I tried to make a homemade Alfredo sauce using just butter, Parmesan cheese, and pasta water. Figured I’d give the pasta portion a trial run tonight to make sure I don’t ruin it with the chicken later this week. I think I mostly got the consistency where I wanted it and actually got the sauce to emulsify. Probably could have done with a touch less pasta water but this was surprisingly tasty for the minimal amount of ingredients used. It was very creamy despite not using cream to make it.
