  1. Korean Style Fried Rice🍚
    recipe by Andy Cooks

I will soon be more fried rice than man at this rate.

With a full-time job, a side business, and a home renovation in progress, I’m always looking for quick and easy dinner ideas. Fried rice is a lifesaver—it’s fast, flavorful, and versatile. I prepare a few cups the night before, and it’s ready to go the next day. This recipe took just 15 minutes to whip up four servings!

Kimchi is already amazing, but lightly frying it before eating takes it to another level. It deepens the flavors, adding a new dimension to its spicy, funky, umami profile. By caramelizing the kimchi juice with soy sauce and gochujang, you create a rich, savory sauce with just the right amount of heat. And to top it all off, a perfectly fried egg brings everything together—because who doesn’t love a fried egg?

I am also learning a lot about plating and light diffusion. In essence, this is all training exercises in the long run.

Go give Andy Cooks a follow! If you enjoy straightforward recipes without all the fluff, paired with a lighthearted sense of humor that reminds us not to take life too seriously, he’s the one to watch.
