Halve & core a butternut squash. Prick all over with a fork. Rub oil, salt, & pepper into the meat of the squash. Roast @ 400F for 40min.

While that’s cooking, pan-fry sausage, diced apples (seasoned with cinnamon, nutmeg, & allspice), & spinach in butter.

Stuff the roasted squash with filling & serve.
1 squash yields 4 large servings.
