Pork belly was seasoned with a wet rub using crushed garlic, achiote, a blend of dry seasonings, lime juice, and finely chopped cilantro. Deglazed the pan with an anejo tequila and simmered into a sauce with some fresh lime juice, then tossed the chopped pieces in to sauce them up before plating.
